Pumpkin Spice molasses cookies INGREDIENTS:
- 2-1/3 C. All Purpose Flour
- 2 t. Baking Soda
- 1/2 t. Salt
- 1/2 t. Ground Cinnamon
- 1/4 t. Ground Ginger
- 1-1/3 C. Granulated Sugar
- 1/2 C. (1 stick) Butter or Margarine softened
- 1/2 C. Libby’s 100% Pure Pumpkin
- 1/4 C. Molasses
- 1 Large Egg
- 1 t. Vanilla Extract
- 1-2/3 C. Nestle Toll House Pumpkin Spice Morsels
Preheat the oven to 350 degrees F.
Lightly spray a large cookie sheet with non-stick spray.
On a flat clean surface place a large strip of wax paper for cooling.
In a mixing bowl add flour, baking soda, salt, cinnamon, ginger, sugar and butter, mix until combined.
Add the pumpkin, molasses, egg and vanilla extract, mix until the batter is creamy and well blended.
Stir in the Pumpkin Spice Morsels.
Spoon dough onto the cookie sheet with a large table spoon at least two inches apart.
Bake for 11 to 13 minutes.
Remove cookies from the cookie sheet onto prepared wax paper.
Let cool for 5 to 10 minutes before consuming.
Let cookies remain in the open until completely cooled. Storing them warm will cause the cookies to stay soft and break apart easily.
Store in your favorite cookie container or jar.
